Frédérique Lauzon
Frédérique was a barista for eight years in Montreal before returning to Québec City with a one-kilo roaster and one idea: coffee you can drink black without wincing. The café carries her grandfather's first name — he took his very strong, in a chipped cup.
She roasts Tuesday mornings — you're welcome to come watch — and buys her green beans from two importers who name the farms. If you ask what's in the cup, be ready: she'll actually answer.
