Simon Cauchon

Fifteen years behind bars on Grande Allée and Petit-Champlain, then the itch for somewhere smaller where he'd know the names. Simon opened Le Rossignol in 2018 in a former shoe shop, keeping the original floor and the oak counter he sanded himself.

His rule: no smoke, no sparkle, no flying shakers. A well-balanced cocktail, served fast, and music low enough to talk over. He makes his syrups on Sundays and his tonic on Mondays.

One guest, two turntables, no requests. From 8 pm, no cover.

Live music

Duo or trio in the back corner, two sets at 9 and 10:30 pm. Tip jar for the band.

Slow Sunday

Board games, half-price boards after 8 pm, soft music.
