Simon Cauchon
Fifteen years behind bars on Grande Allée and Petit-Champlain, then the itch for somewhere smaller where he'd know the names. Simon opened Le Rossignol in 2018 in a former shoe shop, keeping the original floor and the oak counter he sanded himself.
His rule: no smoke, no sparkle, no flying shakers. A well-balanced cocktail, served fast, and music low enough to talk over. He makes his syrups on Sundays and his tonic on Mondays.

Quiz night
Six rounds, teams of four max, from 7:30 pm. The winners walk out with a round.
Blind glass
Three wines served blind, $18. Simon explains after, never before.
Vinyl
One guest, two turntables, no requests. From 8 pm, no cover.
Live music
Duo or trio in the back corner, two sets at 9 and 10:30 pm. Tip jar for the band.
Slow Sunday
Board games, half-price boards after 8 pm, soft music.
Private events
The whole bar Monday to Wednesday, 28 people, open bar or consumption package. Write us.
Hours
Happy hour every day 4 – 6:30 pm. Kitchen open until 11 pm. Terrace closes at 11 pm out of respect for the neighbours.
